Wendy’s Favorite Homemade Cheese Crisp
I like to snack. Who doesn’t, right? And, something cheesy and crispy is like my kryptonite. But processed chips are so unhealthy, and store-bought cheese crisps are so expensive! This little snack can be made at home with the cheese in my fridge (not sliced or pre-shredded…just doesn’t turn out the same) and spices I already have in the cupboard. Give it a try. 🙂

Shredded cheese – DO use Mozzarella, Colby, Pepper Jack, or Monterey Jack for best results. DON’T use cheese that comes preshredded or sliced cheese. That doesn’t crisp up the same way. In this video, I used half sharp cheddar and half pepper jack.
Parmesan – This is a MUST in my book, but it does work without it. I just think it gives the cheesy flavor a punch.
Herbs/Spices – This is where you get to customize. I love using fresh rosemary from my garden. But you can use any spice or herb you like.
Spray an aluminum foil-covered cookie sheet with cooking spray. Shred the cheese to cover the whole tray. Sprinkle with parmesan and herbs/spices. Bake in preheated 400F degree oven for about 10 minutes. Keep an eye on it around that mark because it may need a little more or less time. Turn the tray halfway through if it starts to brown unevenly. Wait for tray to cool and break cheese into bite size chips. Enjoy!
Some yummy variations include: Cumin for a BBQ flavor, garlic powder (not salt!) for garlic cheese bread flavor, cayenne or red pepper flakes for spicy, jalepenos for really spicy, or ranch seasoning for ranch flavor (if you opt for ranch, wait until AFTER the cheese comes out of the oven to sprinkle).
Storage: You can keep these in an air-tight container at room temperature for up to a week (but they won’t last that long) or in the freezer in a tightly-sealed bag for up to 6 months.
If you’re a wine lover, it’s a lot of fun to have the girls over and do wine pairing. The flavor of crisp changes the wine that pairs best with it. Experiment and have fun. 🙂
